Preparation

  • Put the eggs in a food processor and add the Tagatesse and salt.

  • Mix the ingredients until a creamy mass is obtained. Then add the flour and baking powder.

  • Make beurre noisette: cut the butter into small blocks and put in a shallow pan. Heat over a medium flame, stirring constantly to keep the butter from burning. After 30 seconds, some foam will rise and the butter will begin to change colour. Remove the pan from the heat when the butter is golden brown, and pour through a sieve over the mixture in the food processor. Mix everything together until smooth. Add the lemon and orange zest.

  • Preheat the oven to 160 °C.

  • Fill the madeleine moulds with the batter and bake for about 15 minutes.

  • 1 tablespoon baking powder
  • 1 zeste from 1 lemon and 1 orange
  • 1 pinch of salt
  • 125 g butter
