Cook the noodles according to the instructions on the package.
In the meantime, heat a wok on medium heat and add a dash of Biofood oil. Stir fry the ginger, chilli pepper and garlic until they start to smell. After a few minutes you can add the 3 spring onions and the soy sprouts, keep stirring everything. Stir in the juice of half a lime and the soy sauce.
Stir fry about 3 minutes until the noodles are done.
After 3 minutes add the sugar snaps, peppers and noodles.
Meanwhile, fry the Damhert vegan nuggets in a pan with a dash of Biofood olive oil.
Divide the Pad Thai over the plates and spread the fried vegan nuggets over it.
Finish with the rest of the spring onion, coriander leaves, chopped Biofood cashew nuts and lime wedges.
