Preparation

Cut all vegetables fine.

Put olive oil in a pot and fry the vegetables.

Press the cloves of garlic and add.

Pour over with the coconut milk and add the passata, cumin, curry and paprika powder.

Season with salt and pepper.

Cook for 20 minutes, or longer until everything is done.

Divide into bowls and put 2 leaves of fresh coriander in each bowl.

  • 400 ml coconut milk
  • 400 ml tomato passata
  • 1 olive oil
  • 1.5 tablespoon curry powder
  • 0.5 teaspoon paprika powder
  • 1 teaspoon cumin
  • 8 leaves of fresh coriander
  • 150 g red lentils
  • 1 sweet pepper
  • 1 courgette
  • 1 broccoli
