Preparation

Preheat the oven to 200 degrees.

Wash the pepper and cut it into strips.

Place the strips of peppers on a baking tray with the peel facing up and bake them in the oven for 40 minutes. Let the peppers cool down.

Roast the cashew nuts briefly in a dry pan.

Peel the peppers and put them in the food processor together with the cashew nuts, olive oil, lemon juice and garlic. Mix until smooth. Add the parsley and mix.

Season to taste with salt and pepper.
