Preparation

Preheat the oven to 200°.

Sieve the flour over a large bowl

Separate the eggs and beat the egg white until stiff.

Mix the egg yolks with the Tagatesse, baking powder, vanilla extract and salt. Keep beating until you get a creamy mixture.

Make a hole in the middle of the flour and pour in the milk, butter and egg yolk mixture.

Fold the beaten egg white into the mixture.

Peel and cut the mango into small cubes.

Spoon 2/3 of the mango through the batter.

Divide the batter over 12 greased muffin moulds and press the remaining mango pieces into them.

Bake the muffins in the oven for 20-25 minutes

  • 15 g baking powder
  • 2 eggs
  • 150 ml plantbased milk
  • 1 ripe mango
  • 1 salt
