Veggie chili sin carne

Preparation

Soak the beans in water for 8 hours.)

Heat the olive oil in a large saucepan. Fry the onion and garlic. After ±2 minutes, add the chillies, celery and carrots and cook over medium-high heat until softened.

Add the cumin, chilli powder, pepper and salt and stir.

Add the diced tomatoes, lentils, soaked beans, Damhert veggie mince, corn and the stock.

Leave to simmer for 25 minutes.

Cook the basmati rice according to the instructions on the packet.

Serve the rice and chilli with fresh coriander and a little lime juice. You can also add sour cream.

Do you want to make this dish vegan? Simple: leave out the sour cream and the Damhert mince!

  • 1 teaspoon chili powder
  • 1 pinch of pepper and salt
  • 800 g diced tomatoes
  • 400 g kidney beans (soak for 8 hours)
  • 100 g black lentils
  • 400 g damhert veggie mince
  • 300 g corn
  • 250 ml vegetable stock
  • 1 splash of lime juice
  • 1 twig of fresh coriander
  • 1 potion sour cream
  • 450 g basmati rice
  • 2 olive oil
  • 3 cloves of garlic
  • 1 red onion
  • 2 branches de céleri
  • 2 carrots
  • 2 poivrons rouges
