Chocolate mousse

Preparation

  • Melt the chocolate in a little water.

  • Beat the egg yolks and Tagatesse together until creamy, then add the cooled chocolate.

  • Whip the cream until stiff and fold gently into the mixture.

  • Beat the egg whites until stiff and stir gently into the mixture.

  • Spoon the mousse into individual pots and put them in the fridge for a few hours until the mousse is nicely stiffened.

  • 100 g dark chocolate (damhert)
  • 100 g milk chocolate (damhert)
  • 2 eggs
  • 15 g tagatesse
  • 15 cl soy cream
