Spicy burger with grilled vegetables in a bun

Preparation

PlaCut the courgettes and tomatoes into ½ cm thin slices. Crush the garlic.

Put 6 tablespoons of oil with the garlic and half of the rocket into a mixing bowl and puree. Season with pepper.

Heat the grill pan on a medium heat. Brush the tomato and courgette slices with the freshly made rocket oil and grill the courgette for 4 minutes. Grill the tomato slices for 1 minute.

Then grill the Spicy burgers with the rest of the oil in the same grill pan.

Cut the buns open and toast them lightly if necessary. Spread hummus on the bottom halves and then place a burger on top. Then divide the grilled vegetables over it and spoon some salsa over it.

Spread the remaining rocket over the buns. Cover with the top of the roll.

Serve with the rest of the courgette and tomato.

Want extra spice? Add jalapeño peppers to the rocket oil before mashing.

  • 8 tablespoon biofood olive oil
  • 40 g rocket
  • 4 damhert veggie spicy burgers
  • 4 multigrain rolls
  • 4 tablespoon hummus
  • 4 tablespoon mild salsa sauce (jar)
