Cook the pasta.
Meanwhile, cut the tomatoes into eight pieces and the peppers into small squares (remove the seeds).
Put all the vegetables in a pan with a little olive oil, salt and mixed herbs.
When all of this is gently simmering add the tomato paste and the Apple vinegar or lime juice.
Cut the courgette into thin, half-moon shaped slices and cherry tomatoes in quarters.
When the tomatoes and peppers start to dissolve in a sauce, add the cherry tomatoes, courgette and spinach.
Let it all cook about 5-7 minutes to an hour, add olives and your sauce is ready!
