Place the pancake mix, salt and pepper in a bowl. Add the beaten eggs and milk. Stir well. Leave the mixture to rest for 30 minutes.
Meanwhile, finely chop the herbs, add to the batter and stir well.
Fry the pancakes. Leave to cool. Spread the pancakes with the Philadelphia cheese and chop some chives on top. Place pieces of smoked chicken and rocket on top and roll up the pancake.
